Jamon and Science

An event where gastronomy is explained through science... and savoured with emotion.
‘Jamon and Science’ returns to the Netherlands with a second edition that promises to surprise, educate and excite. This unique initiative —brought to you by the Association of Spanish Scientists in the Netherlands (CENL-SWNL)— combines scientific knowledge, sensory experience and gastronomic culture, with cured ham as the star of the show.

The event will be led by two leading figures in their respective fields: Dr Rosa María García Valverde, an international expert in cured ham, and Cati Gómez, a professional ham cutter and leading gastronomic educator in Europe. Together, they combine experience, rigour and passion in an educational, interactive and memorable format.

Dr Rosa María García Valverde
Veterinarian, researcher and international expert in cured ham
With a PhD from the University of Córdoba and a tenured professor at its Faculty of Veterinary Medicine, Rosa María has spent more than 25 years dedicating her career to the scientific study of Iberian ham and other cured products. Her specialisation in sensory analysis, quality control and agri-food innovation has led her to lead research projects, training activities and outreach initiatives both in Spain and abroad.
Rosa not only analyses ham from a scientific perspective: she interprets it from its history, cultural context and organoleptic complexity. She is an authoritative and respected voice in academic and professional circles, and a passionate advocate of the balance between tradition and innovation.

Cati Gómez – The Lady of the Ham
Professional ham cutter, influencer and ambassador for Spanish ham in Europe
Cati Gómez is much more than a ham cutter: she is a sensory educator, entrepreneur and leader in the promotion of Spanish ham beyond our borders. Founder of The Ham Academy, Cati has spent the last 12 years bringing ham to new audiences through events, tastings, masterclasses and gastronomic consulting in Europe, especially in the Netherlands, where she lives.

The activity is open for adults of all ages that enjoys science and/or Spanish culture, with or without a scientific background.
